How to cook the perfect roast with the Ultimate Roaster

The oven quietly doing its work. The smell of dinner filling the house. Everyone slowly making their way to the table...
When I designed the Ultimate Roaster, I wanted a pan that made roasting easier and more reliable — one that created golden, juicy results without the mess.
Over time I’ve settled on a simple method that works beautifully with the Ultimate Roaster. These steps take advantage of the pan’s design and help you get the very best out of it.
Step 1: Take the chill off the meat
Start by bringing your meat out of the fridge before cooking.
Allowing it to sit for a short time helps the roast cook more evenly from edge to centre. When very cold meat goes straight into a hot oven, the outside cooks faster than the inside.
Step 2: Preheat the Ultimate Roaster
One of the most important steps when cooking with the Ultimate Roaster is preheating the pan itself.
Place the Ultimate Roaster in the oven while the oven preheats. Starting with a properly heated pan encourages immediate browning when the meat goes in.
It also helps prevent sticking.
Step 3: Add oil and start browning
Once the pan is hot, lightly coat the base of the Ultimate Roaster with a vegetable oil i.e. grapeseed, avocado or coconut oil.
Then place the meat upside down for the first part of cooking. This helps kickstart browning on what will eventually become the top of the roast.
It’s a small trick that helps build colour and flavour right from the get-go.
Step 4: Insert a meat thermometer
If you’d like perfectly cooked meat every time, a meat thermometer is your best friend.
Insert the thermometer into the thickest part of the roast so you can monitor the internal temperature as it cooks.
I use a Bluetooth thermometer, which allows me to check the temperature without opening the oven door.
Step 5: Roast a little hotter
Because the Ultimate Roaster cooks with the lid on, it creates its own beautifully controlled roasting environment.
For that reason, I've found setting the oven slightly higher than a standard recipe suggests works best.
If a recipe calls for 180°C, try increasing the temperature by around 20°C - 40°C when using the Ultimate Roaster.
This helps achieve that lovely golden colour and crisp finish on the outside, while keeping the roast juicy inside (and your oven free from fat spatter!).
Step 6: Finish under the grill
For an extra crisp finish, turn on the grill for the final few minutes of cooking — but leave the lid on to prevent fat spatters messing up your oven.
Just 10 minutes under the grill can give the roast that deep golden colour — especially helpful for pork crackling or crispy chicken skin.
Keep an eye on it during this stage so it doesn’t overcook.
Step 7: Let the roast rest
Once the roast comes out of the oven, allow it to rest before carving.
Resting gives the juices time to settle back through the meat, which keeps it tender and juicy.
With the Ultimate Roaster, you can simply keep the vented lid over the pan while the roast rests — no foil tents required.
