How it works
How does the vented spatter guard work?
Besides heat, air is the most important ingredient in a really good roast. For meat and vegetables to turn out crisp, they need good air circulation while they cook.
Our purpose-built vented stainless steel lid is designed around exactly that: it lets steam escape and hot air circulate, while containing fat and oil so it doesn't spatter your oven walls.
The result is a clean oven, a juicy roast, and crispy golden skin. All the joy of roast night without the mess.
How is this different to a single-vent lid, oven bag, or foil?
It's one of the most common questions we get, and it's the exact problem Louise set out to solve when she started designing the Ultimate Roaster.
A single-vent lid lets a little steam escape, but moisture still drips back down onto the roast and stops the skin from crisping. Oven bags have the opposite problem, they hold all the steam in.
The vented spatter guard is designed to solve both at once: steam escapes properly and air keeps circulating all the way around the lid, which is what gives you a golden, crispy result while keeping every last spatter contained.
Do vegetables roast crispy or do they go soggy?
They crisp up beautifully. The tri-ply stainless steel base conducts heat evenly and produces the kind of caramelisation that makes roasted vegetables so good, and the vented lid lets hot air circulate and steam escape, so nothing gets soggy.
Because the Ultimate Roaster cooks with the lid on, it creates its own beautifully controlled roasting environment. The meat comes out juicier than in a standard roasting pan (our customers tell us this consistently) and the vegetables come out golden and crisp.

Can it produce crispy crackling on a pork roast?
It absolutely can. Even with the lid on for the entire cook, pork comes out juicy with a crispy top just the way your family likes it. There are a few tricks, like browning the skin first and starting the roast upside down, but the end result is crackling that delivers a satisfying crunch.
And when the cooking is done, the pan cleans up easily, dishwasher safe, or a quick hand wash and it's back to new.
Do I need a roasting rack?
No rack needed. We recommend preheating the pan while the oven heats up, then starting the roast upside down for the first part of the cook to kickstart the browning, before turning it over to finish. It's one less thing to store, and one less thing to wash.

What are the dimensions of the Ultimate Roaster?
The Ultimate Roaster is generous in size at 40 cm w × 33 cm d × 17.5 cm h with the lid on. When the lid is stored upside down in the base of the pan, the height of the Ultimate Roaster is 11 cm.
Will it fit in my oven?
The Ultimate Roaster measures 40 cm across from handle edge to handle edge × 33 cm deep × 17.5 cm high with the lid on.
The pan is designed to fit a standard 54-60 cm oven, while still being deep enough for large joints of meat, whole chickens and holiday roasts.
Customers have told us it fits comfortably in ovens as compact as 54 cm, and even in wood-fired and gas stoves. The moulded handles make it easy to lift in and out without burning yourself, and it's oven safe up to 260°C / 500°F.

Can I use it on the stovetop?
Yes, the Ultimate Roaster is safe for all cooktops including induction. Sear your meat before roasting, deglaze the pan, and make gravy right in the drippings. The base also works beautifully on its own for steak, bacon, French toast and more. One pan, start to finish.
Is it easy to clean?
Yes, the high-polish stainless steel is easy to clean by hand or in the dishwasher. Warm water, mild soap and a non-scratch sponge after each use is all it needs, and for stubborn marks, a splash of vinegar or a little baking soda brings the shine straight back. Do I need to season it before use, like cast iron?
No seasoning needed. Stainless steel is ready to cook with straight out of the box, we just recommend lightly oiling the base of the preheated pan before you start roasting. It's one less job compared to cast iron or carbon steel, which need seasoning and ongoing care to stop them rusting.
How should I store the Ultimate Roaster?
The lid of the Ultimate Roaster inverts neatly into the base of the pan for space-saving storage. Store the pan in a dry place between paper towels or a tea towel to prevent scratches.
What is the Ultimate Roaster made from?
