Using and cleaning your Ultimate Roaster

Designed for a lifetime of roasts, here's how to use and care for it so you can get the most from your Ultimate Roaster and bring back the joy of roast night.

Preheating:

Place the Ultimate Roaster in the oven while the oven preheats.

Starting with a properly heated pan helps create a natural barrier between the meat and/or vegetables and the surface of the stainless steel, which makes sticking far less likely and encourages beautiful browning.

Heat Control:

Your Hagane Home Ultimate Roaster is oven-safe in temperatures up to 260°C/500°F.

We recommend turning the heat up by about 20 degrees when you are roasting with the Ultimate Roaster. For example, if you normally roast at 160°C/320°F, roast at 180°C/360°F. 

Oil:

Ensure the base of your preheated pan is lightly covered in oil before adding your meat or vegetables. Vegetable oils have a higher smoke point than olive oil, and are best used for roasting.

Seasoning:

There is no need to season the pan before cooking with it. Simply pop your ingredients directly into the pre-heated pan with a little coconut or other vegetable oil.

From time to time you may wish to apply a light coating of high-smoke-point oil (like grapeseed or avocado oil) to create a protective barrier, especially after washing. ½ - 1 teaspoon of oil is more than enough. Simply spread it over the base of the pan and wipe off any access.  

Food Temperature:

Allow food to come to room temperature before adding it to the pan to prevent the pan's temperature from dropping and potentially causing food to stick. 

Remember to turn your roasting routine on its head!

1. Place the pan in the oven as you preheat the oven so the pan is warm when you put the food in it.

2. Put the food in ‘upside down’ initially to allow it to brown against the pan and then turn it over to allow the top to get crisp.

3. Turn the temperature up by 20 degrees. For example, if the recipe suggests you roast at 160°C/320°F, roast at 180°C/360°F. 

3. Switch your oven to grill / fan grill for the final few minutes to give your roast that perfect golden finish.

4. Allow extra cooking time. Depending on the size of the roast, allow an extra 10-30 minutes. This will vary from oven to oven.

Cool Down:

Allow the cookware to cool down before cleaning, as placing a hot pan in cold water can cause warping. I put a little hot water in once it’s cooled down to warm. This helps loosen food debris. Soaking the pan will make clean up nice and easy (see tips below).

Cleaning:

1. Although you can put it in the dishwasher, it is large and I have had better results washing it in the sink.

2. When you have finished roasting, add a squirt of dishwashing liquid and warm water to the pan and let it soak while you enjoy your meal. 

3. Use warm water and mild soap after each use.

3. Use a non-scratch sponge or scrubber. The Scrub Daddy smiling scrubbers are great as they allow you to get into the rounded corners of the pan.

4. Avoid harsh cleaners, steel wool, or abrasive scrubbers, which can scratch the surface.

5. For stubborn stains, baking soda and white vinegar can be used.

6. Dry the pan as soon as you wash it to prevent those irritating water spots on your stainless steel.

7. If pale marks or a rainbow effect do appear on your Ultimate Roaster, add 300ml (3 ounces) of water and 100ml (1 ounce) of white vinegar to the pan and bring to the boil.

Storage:

Store your cookware in a dry place between paper towels to prevent scratches.

Remember that the lid of your Ultimate Roaster was designed to store upside down in the base of the pan.

One more thing:

This is a new kind of roaster, so give it a couple of tries to get to know it.

If you usually roast "low and slow", the first time you use the Ultimate Roaster, do exactly what you've always done. And then tweak your method by allowing extra time.

For traditional types of roasting — depending on how you like your roast and what type of oven you've got — you might like to turn up the heat and allow extra roasting time. That's how I get the best results when I'm making a classic roast beef or roasting a whole chicken or turkey.
